1 lb. Breakfast Sausage
Split the links of sausage in half with a knife (do not cut all the way through). Use a skillet and fry them, pressing down every so often. Cook for about 3 to 5 minutes on each side until golden brown.

1 package of PARMA BRAND
Hot Loose Italian Sausage
1 pound lean ground beef
2 pounds velveeta cheese
1/2 jar hot taco sauce
1/2 jar mild salsa
Cook sausage and ground beef, drain. Add sauce and salsa, stir. Add cheese. Mix all together and serve hot with plain tortilla chips. Recipe can be halved...but it is so good, you'll want to make enough. Serves a good size party of 10 to 12 people.

Spicy Sicilian/Zucchini soup -

2 lbs. PARMA BRAND Spicy Sicilian Sausage (8 links)
2 medium Zucchini (chopped)
1 cup onions (chopped)
1 cup celery (chopped)
6 fresh tomatoes or 2 big cans whole tomatoes
1 tsp. garlic powder
1 tsp. Italian seasoning
4 basil leaves (Fresh)
Salt & pepper to taste
4 cups Water
(optional) 2 diced potatoes
1 chopped green pepper
Remove sausage casing* then brown sausage in a medium saucepan, chunking sausage as you brown. Drain and set aside. Keep about 1 tablespoon of fat. Sauté the onions, then add celery and zucchini. Slightly toss then add all other ingredients, feel free to add diced potatoes and or green peppers to keep everyone filled. Cover and simmer at medium/low heat, stirring occasionally for about 30 minutes or until potatoes are softened. Don't forget fresh crusty bread for dipping.
*To remove casing, put the sausage under warm water for a few seconds and it should come right off, or you can purchase our Loose Sausage which does not have any casing.

1 lb. PARMA BRAND Sweet Loose Italian Sausage
1/4 cup flour
4 cups milk
1/2 cup sour cream
Salt & pepper to taste
Biscuits*
Fry sausage in a large deep skillet, chunking as you brown it. Drain after browning and return to skillet. Add flour to coat. At once, add milk cooking over medium heat until thickened. Lower heat to a low simmer adding sour cream and salt and pepper to taste. Combine and immediately serve hot over cooked biscuits for a good rib sticker!

Baked PARMA BRAND Casserole -

1/4 lb. PARMA BRAND Salami* (chunk)
1 lb. PARMA BRAND
Hot Italian Sausage
1 small PARMA BRAND Pepperoni
1 lb. Mozzarella (chunk)
1 cup grated Romano Cheese
6 eggs
1/4 cup Parmesan cheese
Fry sausage in skillet, about 15 minutes. Drain and cut into 1/2 inch pieces, set aside. Cube Mozzarella, Salami and 1/2 Pepperoni (1/2 inch pieces). The rest of the Pepperoni will disappear quickly! Beat eggs in large bowl, then add all ingredients except Parmesan cheese. Mix thoroughly, place in at 8 inch square pan, sprinkle Parmesan cheese on top and bake at 350F for 25 to 30 minutes. Cut and serve. Great appetizer!!
*We have a wide variety of salamis, feel free to experiment.
Mozzarella Parma Pie -

2 lbs. PARMA BRAND Sweet Loose Italian Sausage
(1 small roll)
1/3 cup chopped onion
1/3 cup chopped celery
1or 2 cloves minced garlic
1 6oz. pkg. Mozzarella cheese
3/4 cup spaghetti sauce
1 8 oz. can crescent rolls
Brown sausage, crumble as it cooks (15 minutes medium heat). Drain, set aside. Put onions and celery in same pan with a little olive oil, saute lightly and add garlic, stir a few minutes then add sausage back in. Stir in sauce and 1/2 cup of cheese just until combined. Separate crescent rolls and line pie pan. Pour sausage mixture into prepared pie pan and top with remaining cheese. Bake at 375F for 15 to 20 minutes or until the crust is golden brown.

2 PARMA BRAND Meatball packs
(each pack about 1 3/4 pounds)
1 cup tomato sauce
If you are on the run, pick up 2 PARMA BRAND Meatball packages. This will serve 6 easily. The mix comes fresh frozen, so allow to thaw in refrigerator over night. Open Meatball packs and put in a large bowl, combine with 1 cup of tomato sauce and then form into a meatloaf pan. Cook at 350 degrees for 1-1/2 hours covered.
*PARMA BRAND Meatball mix already has the cheeses, bread crumbs, eggs, seasonings, added to Lean ground beef. All of your work is already done!
Louie's Penne Pasta -

1 pound PARMA BRAND Spicy Sicilian Sausage (4 links)
1 cup diced onion
2-3 cloves garlic, minced
2 bell red peppers blackened
2 diced tomatoes
Sliced black olives (garnish)
1/2 cup feta cheese or parmesan
Fresh basil
Olive oil
1 pound Penne pasta (al Dente)
Red wine (to taste)
Cook pasta al dente. Cook sausage covered in a skillet with a small amount of water for approximately 25 minutes. Drain and slice in 1 inch sections, set aside. Saute onion and garlic with olive oil, add diced tomatoes, allow to combine, add sliced red peppers, stir. Lightly brown sausage slices and add to mixture. A dash of salt and pepper, if needed, and of course a splash of wine for more flavor. This is all done quickly and tossed on penne pasta. Then, add crumbled feta cheese and or Parmesan cheese, sliced black olives and a few fresh basil leaves. It's a beautiful and delicious treat!

Lasagna Rolls -

4 lasagna noodles (cooked) multiply as needed!!
1/2 pound PARMA BRAND
Hot Italian Sausage (2 links)
1/4 cup chopped onion
1 beaten egg
1/2 cup ricotta cheese
1/2 cup cottage cheese (small curd)
1/2 tsp. dried parsley
1 cup grated mozzarella cheese
1 1/2 cup plain spaghetti sauce
1/4 cup grated parmesan cheese
Cook lasagna noodles as per box instruction, keep firm. Drain and rinse noodles in cold water. Drain well, set aside. Meanwhile, in a large skillet cook ground* sausage and onion until sausage is browned and cooked, about 15 minutes. Drain fat. In a mixing bowl stir together egg, ricotta cheese, cottage cheese and parsley. Stir in cooled sausage mixture. Divide filling mixture into equal parts, spread a portion over each noodle from one end to the other and roll length wise. Place noodles seam side down, in a baking dish. Spoon spaghetti sauce over the rolls and sprinkle with mozzarella cheese.
Bake covered in a 375F oven about 30 minutes, or until heated through.
Uncover and sprinkle with parmesan cheese and serve!

*You can easily remove the casing from the link sausage by running it under warm water for a few seconds. Or you can buy our loose sausage which is not in a casing.
Hot Sausage Sandwich -

8 Links PARMA BRAND
Hot Sausage (2 lbs.)
1 Vidalia onion
1 green pepper
1 red pepper
1 to 2 cups tomato sauce
Preheat oven to 350F.
Slice onion, green and red pepper and set in baking dish or crock pot*.
Put sausage on top of vegetables, add about 1-1/2 cups tomato sauce, pour all over vegetables and sausage. Cover with aluminum foil if using baking dish. Allow to cook for at least 2 hours. Remove and serve on hot sausage buns!
Remember you can multiply this recipe, and use any of our other sausages - Mild Italian, Garlic and Spicy Sicilian. Also, the longer you allow it to cook in the sauce, the softer the sausage will become... Watch it melt in your mouth!
*It is recommended to put the crock pot on a low setting for a longer amount of time (5 to 6 hours), but you may also use the higher setting if you need sausage to be cooked faster (cook no less than 3 hours on high), remember when cooking more sausage in the crock pot, it is necessary to leave it in longer in order to be fully cooked.

1 Dozen Eggs
3/4 lb. Parma Brand Sweet Loose Italian Sausage
1/2 lb. thick sliced Parma Brand Capicollo
Less than 1/4 cup Romano Cheese
Salt, Pepper & Parsley to taste
Grated Mozzarella for topping if desired
First fry sausage, breaking it up as it cooks, about 15 minutes. Dice up Capicollo slices and add to Sausage. Stir a few minutes then drain. Allow to cool slightly. Beat eggs well and add all other ingredients except mozzarella. Coat a medium frying pan with olive oil and put on medium low heat, pour mixture into pan and cook until set. Be careful not to burn. When ready, use a plate to flip frittata and then slip it back in the pan to cook the other side. Cook until set and golden on the under side. Turn onto dish and garnish with mozzarella and parsley.
Serves 4 heartily!
Easy Pizza -

1/2 pound PARMA BRAND
Hot Italian Sausage
1 small PARMA BRAND Pepperoni (slice as needed)
1 garlic clove (pressed)
1 cup onion, thinly sliced
1 cup green and or red bell pepper (cut in thin strips)
1 package (10 oz.) Pillsbury all ready pie crust
1/2 cup mild salsa
2 cups shredded Monterey jack cheese
In a large skillet brown Hot Sausage, add pressed garlic, sliced onion and pepper strips. Allow to combine, approximately 15 minutes total, drain slightly, set aside.
Heat oven to 425F. Lightly grease a pizza pan. Unroll dough and place on greased pan. Bake for 8 minutes, take out and spoon sausage mixture over partially baked crust. Spoon salsa over sausage mixture and sprinkle with cheese. Add Pepperoni slices, if you have any left! Bake an additional 15 to 18 minutes or until crust is golden brown. Let the kids dig in and make more!
